Tim and Lili Polk knew what they wanted when they were remodeling their restaurant… they just needed to find a construction company to bring their dreams to fruition.
“We started working with a company last summer and to say the least, it did not go well,” says Lili, co-owner of Chappell’s Coral Grill in Covington Plaza on Fort Wayne’s southwest side. “So, my husband, Tim, asked a friend for a recommendation. The friend said, ‘Hands down, Shawnee Construction is who you want to call.’”
The Polks took the suggestion to heart and they’re glad they did.
“Shawnee did a marvelous job,” says Lili. “Matt Schenkel was very easy to talk to and he worked with us and guided us through the project. It was a pleasure to work with him.”
What started out as a somewhat small job, grew substantially as time went by.
“They added a banquet room, remodeled the dining room and completely re-did the kitchen with all new equipment and a new layout,” says Matt Schenkel, president of Shawnee Construction & Engineering in Fort Wayne. “We created a new entryway and built a wine room, too. Tim and Lili showed us a picture of a wine room they liked. As they say, a picture’s worth a thousand words. It was very helpful to us so we could give them the look they wanted.”
As with most construction projects, things change through the course of the work. In this case, there was a lot of redesigning happening.
“Our guys are really good at managing that,” says Matt’s brother, John Schenkel, vice president of Shawnee. “They get ideas as they go along and they can make changes on the fly. We’ve worked on a lot of restaurants and we know that things can change on a daily basis. The owners come up with new plans and we implement them. We know it’s important to meet their vision.”
Shawnee Construction & Engineering was started 50 years ago by Matt and John’s father. The commercial and industrial construction company has earned a reputation of integrity and quality workmanship over the years. It highly values long-term relationships and it is there for its customers for the life of the building.
“We had a small piece of trim that came loose this past summer, so I called Matt,” says Lili. “Here it was one year after they had finished the project and Matt got on it right away and sent someone over to fix it. That shows what great people they are. And our customers are just blown away by the work Shawnee did. They’ve said things like, ‘Wow! This is spectacular and beautiful.’ My compliments to Shawnee. If I ever have to do another construction project, they would be my very first choice.”
